An authentic chicken and couscous recipe by Delices d’Annie

The ingredients that you need to make 4 servings

This dish will be better using a nice free-range or organic chicken. Also, we recommend the use of fresh and best-quality vegetables.

  • 250 g couscous
  • 4 skinless and boneless chicken breast halves
  • 2 red onions
  • 2 carrotscouscous
  • 1 zucchini
  • 1 lemon
  • a few fresh mint leaves
  • 1 tsp ground cumin
  • 200 g jarred roasted red peppers
  • 1 tsp smoked paprika
  • 1 tbsp. ground coriander
  • olive oil
  • extra virgin olive oil
  • salt and pepper to taste

How to prepare your dish?


First, preheat oven to 200°C.

To allow the spices penetrating the meat, make some deep crisscross slashes into the chicken, and rub it with lemon juice, olive oil, salt, pepper and cumin. Then, place the chicken on a roasting tray and put into the hot oven.

While it is cooking, peel and cut the onions and carrots into chunks, quarter the zucchini.

After around 15 minutes, reduce the heat to 180°C. Add the vegetables to the tray. Continue roasting for a further hour or until cooked through. Once the chicken is perfectly cooked, lift the meat onto a plate and set aside.

Onto a board, roughly chop the vegetables, then tip back into the tray. Pour in ½ liter boiling water. Stir well and make sure to scrape up all the goodness stuck in the bottom of the tray. Add the smoked paprika, ground coriander and drained and chopped roasted red peppers. Bring to a simmer over medium heat and dump in the couscous. Remove from the heat, cover, and let sit for 5–10 minutes or until the couscous has absorbed all of the water.

In the meanwhile, finely chop the fresh mint leaves. When the couscous is ready, add the chopped mint, drizzle with a good lug of extra virgin olive oil and stir well to fluff up the couscous.
